What you'll need: - Egg whites - Gelatine (either leaves or powder) - Sugar - Liquid glucose or corn syrup - Corn starch - Powder sugar - Strong brewed chai tea

Start by softening the gelatine in water. This is done slightly differently depending on whether you use gelatine sheets or powder.

In a mixing bowl, beat your egg whites until very foamy, then set aside.

Tip: this recipe is easiest to make with a stand mixer with a whisk attachment.

Meanwhile, make a chai tea sugar syrup. The gelatine will be melted into the syrup and then the hot mixture whipped into the egg whites creating pillowy  marshmallow.

Spread the sticky marshmallow mixture evenly in a lined square pan, well dusted with a powdered sugar and cornstarch mixture.
