Brioche is a buttery enriched bread.  You'll need: - Flour - Sugar - Salt - Milk - Butter - Yeast - Eggs

In order to make this dough, I highly recommend using a stand mixer fitted with a dough hook.

Begin by mixing the flours, salt and sugar together. Then add the activated yeast and eggs.  Once your dough has come together, add the butter bit by bit and knead.

Once the dough is pulling itself off the sides of the bowl, place this in a greased bowl to proof in the fridge overnight. It should double in size!

Tip out onto a clean work surface and knock back. Cut into 24 equal pieces and form balls.  Place these in greased muffin trays to proof for the second time.

Before baking, glaze with an egg wash and top with seasonings of your choice!
