Super Moist Carrot Cake with Pineapple and Coconut
My Granny's classic Southern Carrot Cake recipe, packed full of pineapple, with coconut and walnuts. Layered with cream cheese frosting.
- Flavorless oil
- Baking soda
- Vanilla extract
- Grated carrots
- Flaked coconut
- Crushed pineapple

To make the cake as a layer cake, mix together the batter and split equally amongst two or three pans.
