Soft and Chewy Oatmeal Sandwich Cookies with Marshmallow Filling
The ultimate oatmeal cookie sandwiches. Soft, chewy spiced molasses oatmeal cookies with a simple, light and airy marshmallow fluff cream filling.
For the cookies, you'll need: - Butter - Molasses - Brown sugar - Sugar - Egg - Vanilla - Flour - Spices - Baking soda - Salt - Oats
Begin by melting the butter and molasses, then adding this to the sugar. Whisk until fully emulsified.
Then add the egg and vanilla, before adding the flour, salt, baking soda and spices. Whisk until just combined in a wet batter before adding the oats.
Dollop the cookies out, well spaced on a lined cookie sheet. The cookie dough is runny and will spread a little. This helps make them chewy when baked.
TIPS AND TRICKS
While baking your cookie batches, whip up your frosting using marshmallow fluff, butter, powdered sugar, vanilla and milk.
Once the cookies are cool, pipe the filling onto the base of a cookie and sandwich with another until they're all paired!
