The Perfect Pumpkin Pie Bites
The BEST bitesize Thanksgiving treat! Mini Pumpkin Pie bites with a gingersnap cookie crust, make for a fun treat this holiday. Great to make ahead and feed a crowd!
What you'll need:
- Gingersnap cookie crumbs
- Egg yolk
- Salt and spices
- Pumpkin puree
- Evaporated milk
Start by mixing the butter and cookie crumbs together and then pressing into the base of a lined mini muffin pan.
Then whisk together your other ingredients to form the pumpkin pie filling. Spoon this on top of the bases.
Bake in the center of a preheated oven. For best results, start at a high heat and then turn down - just like with a full size pie!
Let cool and top with whipped cream or Cool Whip!
