Samoas Brownies: The Ultimate Coconut Caramel Chocolate Brownies!

My favourite Girl Scout cookie has to be Samoas! These brownies are inspired by their cookie namesake. A fudgy brownie with coconut caramel and a chocolate drizzle.

This recipe can be divided into two layers - the brownie and the coconut caramel top.

For the brownie, you'll need: - Brown sugar - Powdered sugar - Cocoa powder - Flour - Oil - Water - Vanilla - Eggs

Simply mix together the dry ingredients in a small bowl. Meanwhile, whisk the wet ingredients together. Then add dry to wet and stir to a thick batter.

Pour this batter into a lined square baking tin, spread into an even layer and bake until a toothpick comes out just clean.

While the brownie layer bakes, prep your coconut caramel.  You'll need: - Brown sugar - Butter - Water - Heavy cream - Vanilla - Sweetened shredded coconut

This is an easy one-pan caramel. Simply cook the sugar, butter and water in a saucepan until the sugar has fully dissolved.

Add the vanilla and cream and allow to simmer before taking off the heat and adding the coconut. Pour this over the brownies fresh baked.

Allow the layered brownies to cool before topping with a chocolate drizzle.
