The BEST Homemade Cherry Curd
Smooth, glossy, and gorgeously red! This easy homemade cherry curd recipe is packed full of flavor from fresh cherries to make a fun new tea time spread!
You only need 5 ingredients: - Cherries - Sugar - Lemon juice - Eggs - Butter
Start by pitting and chopping the cherries. Then cook these in a saucepan with the sugar and lemon juice until the sugar dissolves.
Blitz the cherries with a blender until well pureed. Then straight this back into your saucepan.
Add the eggs and cook, stirring constantly, until thickened. The test for doneness is to be able to coat the back of a spoon.
TIPS & TRICKS
Finally add the butter to add the glossy finish! Pour into a heatproof bowl or jar to allow to cool.
Use in desserts, as cake filling or for a spread on scones or toast!
